Chicken in a Pan
The other night I saw a recipe for chicken in a pot. It was a whole chicken and took about 2 hours to cook.  I only have chicken breast and an hour so I tried the recipe anyways.

  • Chicken Breast
  • Hearty veggies
  • Onion
  • Olive Oil
  • Spices
  • Water

In a large skillet:

  1. Sauté onions and garlic in olive oil
  2. Remove the onions and set aside
  3. Sear the chicken break until it is golden brown on each side
  4. Add the onions back in the skillet with the chicken
  5. Add hearty veggies like potatoes (I used sweet potato and red potato, but you could use what ever you had, carrots and celery would be good too.)
  6. Add water until only the top of the chicken and veggies is showing.  
  7. Add salt, pepper and one bay leaf
  8. Turn the heat up until the water boils
  9. Turn the heat down to a simmer and cover
  10. In 30 minutes you will have moist chicken and tender veggies
  11. Serve over rice, add spices as you wish

Ravioli Pasta
1 Cup Flour (I use wheat, you can use whatever you have)
1 Egg
water

Mix egg and flour in a bowl.  Add a few tbsp of water until dough becomes a ball.  Don't make the dough too sticky, just keep kneading the dough into a ball.  Roll the dough out on a floured mat. It helps to roll out smaller pieces.  Take a cookie cutter, or glass and cut out rounds.  Fill the rounds with 1/2 tbsp of filling.  Dampen the edges of the rounds fold over so that the rounds become a half moon.  Place on a cookie sheet and put in the freezer so the raviolis freeze without sticking.  Once frozen place in a freezer bag and cook as needed.  Cook in boiling water until tender.

Ravioli Filling
You can really put anything in your raviolis.  One easy recipe is ricotta cheese and spinach.  Another great one is mascarpone cheese and butternut squash.  Be sure to pre-cook any veggies or meats before putting them in your raviolis.

Backed Apple
This makes a pretty good dessert on a cold night.

  1. Cut the tops off of an apple and scoop out the core
  2. Fill the apple with nuts, honey, and sugar, oats, granola etc...
  3. Put the apple in a 350 degree oven for 40 min. or until the skin is shriveling and the apple is tender
  4. Take apple out and pour a little bit of cream, milk, half and half or ice cream over the apple
  5. Serve immediately


Black Bean Burger
Last sunday Pete and I discovered Russo's, an amazing farm stand with fresh produce at very good prices.  When we got home with our tasty loot we decided to have black bean burgers for dinner.  Now, I have never made black bean burgers, nor did I look up a rescipe when I was attempting this but here is what I did.
  1. Minced 3 cloves of garlic, 1/2 onion
  2. Sauteed garlic and onion in olive oil on medium/low heat
  3. Chopped 1/4 of a summer squash and 1/4 cucumber and 1/4 cup mushrooms into tiny pieces (similar to the size of the minced onion pieces)
  4. Through the squash, cucumber and mushrooms into the oil (this smells super good by the way)
  5. Let veggies cook on medium low until browned
  6. Drained one can of black beans into a bowl
  7. Added 1/2 cup whole wheat bread crumbs to beans
  8. Added veggies to beans and bread crumbs (the consistency kind of resembled ground meat)
  9. Formed burger
  10. Put burgers in skillet where the veggies cooked (added a little more olive oil)
  11. Browned burgers on both sides
  12. Served up on homemade bread rolls (Recipe from Food Matter by Mark Bittman) with a smear of dijon mustard.
The burgers were filling and Pete approved!
